1 can (8oz) sliced peaches 1/2 cup water 1/4 teaspoon salt 1 cup minute Rice 1 pk (3 1/2oz) Jello vanila Pudding & Pie Filling 2 1/4 cups milk 1 egg yolk slightly beaten 1 egg white 1 tablespoon sugar 1 teaspoon vanilla (over) Drain peaches, measure 1/2 cup syrup into a saucepan. Dice peaches set aside, add water, salt and rice to peach syrup in pan. Bring quickly to a boil. Reduce heat, cover & simmer 5 min. Then add pudding mix, milk & egg yolk. Cook and stir over medium heat until mixture comes to a full boil, about 5 min. Remove from heat. Beat egg white until foamy, add sugar and beat until mixture will stand in peaks. Gradually fold warm pudding into egg white. Fold in diced peaches & vanilla. Serve warm, or coolto room temp, then chill 1 hour before serving. Makes 6 or 8 servings.
